1. Does it makes sense to add sautéed organ meat to Stage 3 to match sauteed vegetables? Becky's book has a liver pate recipe in Stage 1 that mentions sauteeing the liver, but then mentions you can pan fry the liver in Stage 2. Something doesn't seem right about placing sauteed liver in stage 1 or 2. Please clarify the correct stage to place  sautéed organ meat.
